Tomato, Corn & Avocado Salad

In the animated special event Maya and the Three, Princess Maya wants to be more than a diplomat like her mother—she wants to fight. When Zatz, the bat prince, tries to take Maya to her coronation to the underworld to be sacrificed, her father and brothers declare that they will go to war with the gods to save her. Over the course of the story, Maya realizes her destiny as an eagle warrior, who will fight alongside her three jaguar brothers to vanquish the gods of the underworld.

To power us through Jorge Gutierrez’s feast for the eyes, we created this fresh and hearty salad using staples of Mesoamerican cuisine: charred fresh corn, juicy tomatoes, and creamy avocado with just enough lime, chile, cilantro, and cotija cheese to bring everything together. You may typically use tortilla chips for scooping up dips, but we love them with a crispy, salty crouton-like addition.

Vegetable oil for greasing

4 ears fresh corn

1 tablespoon freshly squeezed lime juice

1 garlic clove, finely chopped

¼ teaspoon granulated sugar

3 tablespoons extra virgin olive oil

Kosher salt and freshly ground black pepper

1 small red Fresno chile or jalapeño

2 ripe avocados

2 cups salted corn tortilla chips

1 pint grape tomatoes, halved

1 small bunch fresh cilantro (about ½ ounce), coarsely chopped

2 ounces cotija cheese, crumbled
